Brunswick Stew

This hearty dish is brimming with veggies, tender pulled pork, and a medley of flavors like tangy BBQ, savory chicken, and creamy lima beans. Whether you're cozying up on a cold winter's evening or looking for a no-fuss meal that's easy to whip up, this thick, tomato-based stew is just what you need!

Ingredients
- 2 tbsp olive oil
- 1 medium onion diced
- 1 tsp minced garlic
- 1 tsp fresh thyme minced
- 1 14oz can diced tomatoes
- 1 8oz can tomato sauce
- 1/2 cup BBQ sauce
- 1 tsp Creole seasoning
- 1 lb cooked chicken or turkey shredded
- 1 lb pulled pork
- 2 cups chicken broth
- 1 1/2 cups frozen sweet corn
- 1 1/2 cups frozen lima beans
- 1 cup frozen okra
- Salt and pepper to taste
Instructions
- Heat oil in a large Dutch oven pot over medium heat. Then add onions, garlic, and thyme, and sauté for 2-3 minutes until the onions are translucent.
- Next, add diced tomatoes, tomato sauce, BBQ sauce, and Creole seasoning. Continue cooking for another 3 minutes.
- Pour in chicken broth, bring to a boil, and let it simmer for about 1-2 minutes. Then add in shredded cooked chicken and pulled pork, and continue cooking for about 8-10 minutes.
- Finally, add the sweet corn, lima beans, and okra and continue cooking for 5-7 more minutes or to desired consistency. Taste and adjust salt and pepper as desired.
- Garnish with fresh parsley, serve warm, and enjoy.
Notes
- If the stew becomes too thick, add more broth a little at a time until you get the desired consistency.
