Cook the pasta according to package instruction - minus 2 minutes. Remove from heat, drain, and rinse in cold water and set aside.

Heat a large pan over medium-high heat. add carrots, zucchini, lentils and all seasonings and dry sauté for about 5 minutes.
Add crushed tomatoes and pasta and gently mix until well combined. Cover with a lid and reduce heat to medium-low. Bring to a simmer and allow to cook for another 5-7 minutes.
Add fresh spinach and gently fold in until evenly distributed in pasta. Turn off the heat and allow the residual heat from the past to wilt the spinach.
