Crawfish Fettuccine Alfredo

Something I came up with last night on a whim. Wanted whole wheat Fettuccine but couldn't find any?.

Ingredients

  • 1 cup onion
  • 1/2 cup red peppers
  • 1/2 cup green peppers
  • 1/2 cup Baby Bella mushrooms
  • 1 pint heavy cream
  • 1/4 cup flour less than 1/4
  • Pure organic Irish butter
  • Two packs of crawfish
  • 1/2 clove garlic
  • Fettuccine noodles
  • Seafood stock
  • celery diced
  • 1 can diced tomato
  • Parmesan cheese

Seasoning

  • salt
  • peppercorn
  • onion powder
  • chili powder
  • crushed red pepper

Instructions

  • Sauté the onions, diced mushroom, garlic in butter and olive oil in skillet on 7 until mushroom are tender and onion is translucent (sauté with a pinch of salt and peppercorn)
  • While this is going, start water to boil with olive oil for pasta. Add pasta once it comes to a rolling boil
  • Season crawfish with creole seasoning, Italian herbs, onion powder
  • Add crawfish. Since the crawfish comes cooked you don't want to over cook it and it be rubbery ( 6 minutes ).
  • Add entire can of tomato and tomato juice. Season more if necessary. Bring to a slow simmer. (Preheat oven at this time to 365)
  • Add heavy cream to a cup, whisk flour until lumps are gone. Add mixture to pot depending on desired thickness. Add Parmesan cheese. Stir until all the ingredients are completely covered in the sauce. Let simmer for 5 minutes
  • Add pasta in skillet, stir until completely covered.
  • TOP w/ Parmesan. Bake in oven for 17 minutes.
